Pastry Chef / Baker – Croissants and Artisan Bread

About the role

A well-established business group is expanding into the bakery sector with a new boulangerie start-up in Durrës. It is looking for an experienced pastry chef / baker who will lead production and help set up the bakery from the start, including choosing equipment, developing products and organising the workflow.

Key responsibilities

• Produce croissants, pains au chocolat, pains aux raisins and artisan breads
• Develop and standardise recipes, portion weights and production processes
• Plan daily production and maintain consistent product quality
• Manage ingredients efficiently and minimise waste
• Maintain food hygiene and safety standards
• Train assistants and prepare production processes for future outlets

Required profile

• Proven hands-on experience making laminated dough and artisan bread
• Strong knowledge of fermentation, lamination and baking
• Ability to work independently and organise bakery operations
• Reliability, attention to detail and interest in a long-term role
• Experience in a boulangerie outside Albania is an advantage
